Soy lecithin is a chemically complex substance that belongs to the fats known as phospholipids, including among its ingredients glycerol, fatty acids, phosphoric acid, ethanolamine, and two extremely important vitamins – choline and inositol.
All of the cells in our bodies contain phospholipids in their structure, ensuring in this way a fluid exchange of substances in the membranes.
